Photos ~ Fabulous Dinners


Quite a few people wonder what vegetarians eat.  Years ago, before transitioning to a plant-based diet, I used to wonder the same thing. What I have found, is that once you open yourself up to exploring vegetarian options, you will find almost limitless possibilities.

There are abundant varieties of vegetables that I was introduced to once I joined a local CSA. For the first time I tried Russian kale, garlic scapes, and mustard greens. Exploring farmer's markets led to an even wider bounty of interesting food including flowering yu choi, swirly pea tendrils, and white blossomed Chinese broccoli.

Complimenting all the fabulous vegetables on my plate are a wonderful array of ancient grains like amaranth, spelt, and kamut. Each one with its own flavorful nuance. In addition, there are a great number of heirloom beans available. Especially beautiful are the brown and white speckled Appaloosa beans and the black and white Calypso beans, whose speckled coloration reminds me of cows!
